1000 ml Chicken Stock
warm

2 tbsp Extra Virgin Olive Oil
OVE Classic

2 tbsp Truffle Oil
OVE Truffle

125 ml White Wine

1 piece Onion
finely diced

100 g Parmesan
grated

2 tbsp Butter

Instructions

Heat stock in a separate pan and keep warm.

Heat olive oil in a heavy-bottomed pan over medium heat.

Sauté onion until translucent, about 5 minutes.

Add rice and stir to coat with oil, toasting for 2 minutes.

Pour in wine and stir until absorbed.

Add warm stock one ladle at a time, stirring constantly.

Continue for 18-20 minutes until rice is creamy but still has bite.

Stir in butter, parmesan, and finish with truffle oil.
