6 whole Large bell peppers

1 cup Brown rice
cooked

4 tbsp OVE Premium Extra Virgin Olive Oil

1 medium Red onion

1 cup Cherry tomatoes

Instructions

Preheat oven to 375°F (190°C).

Cut tops off peppers and remove seeds and membranes.

Heat 2 tbsp olive oil in a large skillet over medium heat.

Sauté onion and zucchini until tender, about 5 minutes.

Add tomatoes, oregano, and basil. Cook for 3 minutes.

Stir in cooked rice, feta, and pine nuts.

Stuff peppers with the mixture and place in baking dish.

Drizzle with remaining olive oil and bake for 30-35 minutes.
